About Me
Self Taught Baker
Hi! I’m Zach
& baking is my love language
My baking journey began in a Swedish student kitchen, where homesick baking turned into a passion that followed me to Portugal and connected me with 55k friends on TikTok. With my background in Communication and love for aesthetic recipe cards, I created The Cookie Gallery as a virtual kitchen table where recipes come with stories.
Here, you’ll find kitchen tested recipes, beautiful printable cards, and the baking lessons I’ve gathered across three countries. Whether you’re here for chocolate chip cookies or creative flavor experiments, there’s always room at my table for one more baker.

My Sweet Baking Journey
Hello and welcome to my little corner of the internet! I’m so happy you’re here.
My story with food, and especially with baking, is a journey of love, discovery, and a whole lot of chocolate. It all started in Lahore, Pakistan, where I was born and raised.
To be honest, I wasn’t the kind of kid who was obsessed with all food. I was a picky eater! What I did love were the traditional, festive sweets that would appear on special occasions like Eid, think creamy Kheer, soft Rasmalai, and sticky sweet Jalebi. These were the desserts of my childhood. The world of baking, with its ovens and precise measurements, felt very far away.
But there were two things I was absolutely crazy about: fruits and chocolates.
My Baba (father) used to travel to Europe and the Middle East for work, and he would always bring back suitcases full of beautiful chocolates just for me. And fruits? They were a constant in our home. My father loved them, so our house was always overflowing with abundant, beautiful fruits, no matter the season. It never even occurred to me that these two loves of mine, chocolate and fruit, could be combined to create something magical.
This led to some of my fondest (and funniest) childhood memories. My mother would often pretend to be stern, threatening to tell my father, “Your daughter isn’t eating her dinner again! But she never says no to chocolates!” And my Baba? He would play along, pretending to be upset, “Zaray (my baba used to call me with love), I am so disappointed in you! You ate all the chocolates yourself and didn’t even save any for me?” Those little moments, full of love and laughter, are so precious to me.
Fast forward to my marriage. I quickly discovered that my husband was an even bigger dessert enthusiast than I was! He became my partner in culinary crime. Together, we started to explore how to make chocolate an even more important part of our lives.
The real turning point came when I moved to Sweden for university. A fellow student once fed me a slice of her homemade chocolate cake, and it was like a lightbulb went off. I thought, “I need to learn how to make this!” Living in a new country like Sweden can be wonderful, but it can also be lonely if you don’t have a hobby. For me, that hobby became my anchor. And for my husband, it was the perfect excuse to be my official taste tester.
I was a complete beginner. Honestly, I didn’t even know the difference between a chocolate sponge cake and a brownie! But I was a quick learner, and I was hooked. In just one year, I had experimented so much that I had a long list of recipes for cookies, brownies, and cakes. All of this was possible thanks to my husband, who not only funded this (sometimes expensive!) hobby but was also my biggest supporter. He encouraged me, tasted my failures, celebrated my successes, pushed me not to give up, and taught me to just enjoy the process and not stress. He is the reason I fell in love with baking.
And then, I discovered my ultimate obsession: Brown Butter.
Oh my god, brown butter. It was like discovering a secret golden door in the world of baking. And let me tell you, once that door opened, there was absolutely no going back. The first time I watched butter turn a beautiful amber color and fill my kitchen with that incredible nutty aroma, I was hooked for life. It was magic.
Now, it’s my not so secret weapon. If you look through my recipes, you’ll see it everywhere. In cookies, in cakes, in brownies, you name it. I have a strong preference for using brown butter instead of regular butter whenever I can. That nutty, toasty, deeply caramelized flavor just adds a whole new dimension to everything. It elevates a simple recipe into something truly special. I truly believe brown butter isn’t just an ingredient; it’s a showstopper. Not once, but every single time.
During my four years in Sweden, I baked more than I ever could have imagined. And the best part was sharing it. We created so many sweet memories with friends and family. I’ll never forget one freezing evening in Sundsvall, when it was -20 degrees Celsius outside. We baked a batch of dark chocolate chip cookies (with brown butter, of course!), made some coffee, and sat on our balcony, surrounded by snow, enjoying the warmth of our treats. It was pure magic.
Life has taken us on another adventure, and I am now living in sunny Portugal. The country has changed, but my passion for baking hasn’t. It’s stronger than ever. Now, we’ve even added two new members to our family: our cats, Milo and Mini. And let me tell you, Milo is my little “curiosity baby.” He is absolutely fascinated by cakes. It feels like we’ve gained another tiny crime partner in the kitchen!
And that brings me to today. I’ve finally started this blog to share all the recipes I’ve learned, the experiments I’ve made, and the sweet memories I’ve created along the way. From a girl in Lahore who only knew festive sweets, to a home baker in Sweden and Portugal, it’s been a delicious journey.
I truly hope you enjoy the recipes and find a little bit of sweetness for your own life.
Happy Baking!
Zach
