Prep the Raisins:
- If raisins are dry, soak in hot water for 5-10 minutes. Drain and pat dry.
Make the Cookies:
- Brown the butter: Cut butter into pieces. Place in light-colored saucepan over medium heat. Stir frequently until it foams, subsides, and turns amber with brown specks. Immediately pour into heatproof bowl. Cool 30 minutes.
- Mix wet: In a large bowl, combine cooled brown butter (add 1 tablespoon melted butter), brown sugar, and granulated sugar. Whisk until glossy. Add egg and vanilla. Whisk until smooth.
- Mix dry: In a separate bowl, whisk together flour, oats, baking soda, salt, cinnamon, and nutmeg (if using).
- Combine: Pour dry into wet. Fold until just combined (a few flour streaks is okay). Fold in raisins. Do not overmix.
- Chill: Portion into 55g balls (about 3.5 tablespoons each). Place on parchment-lined tray. Cover and refrigerate at least 2 hours.
- Preheat and prep: When ready, preheat oven to 175°C (350°F). Line baking sheet with parchment.
- Bake: Place chilled dough balls on prepared sheet, 8-10 cm apart. Bake 13-14 minutes until edges are golden and centers look puffy.
- Optional: Sprinkle with flaky sea salt immediately after baking.
- Cool: Let rest on baking sheet 10 minutes. Transfer to wire rack.
Notes
- Soak raisins if dry. This keeps them plump and juicy instead of hard.
- Cool brown butter for 30 minutes. Oats get gummy if butter is too warm.
- Do not skip the chill. 2 hours minimum. Oats need time to hydrate.
- Use rolled oats, not quick oats. Quick oats make cakey cookies.
- Salt is increased. ¾ tsp balances the sweetness of raisins and sugar.
- Do not overmix. Overmixing develops gluten and makes cookies tough.
- Bake 13-14 minutes. Oatmeal cookies take longer because oats absorb moisture.
- Cool 10 minutes on sheet. Oatmeal cookies are more fragile when hot.
- Flaky sea salt is optional. It enhances sweetness and warmth.
- Freeze unbaked dough. Scoop into balls, freeze, and bake from frozen for 14-15 minutes.
